THREE NEW WAYS TO ENJOY OUR VEGAN BANANA PANCAKES

A TWIST ON OUR CLASSIC RECIPE...

 

If you're anything like us, then pancakes will be a regular meal at your house. We probably have them at least once a week, usually on a weekend for brunch. One of our first ever recipes we put on the blog was for some vegan banana pancakes. We've stuck with this recipe for years and it's served us well! However, recently we've started experimenting with the basic recipe, mixing it up by adding fruit to the batter or thinning it out to make crepes instead of American-style pancakes. Here are three new ways to enjoy our vegan banana pancakes:

 

 

01. PANCAKE CEREAL

This trend has popped up on social media over the past few months, and although we're a tad late to the game, we just couldn't resist making them for ourselves. They're basically mini baby sized pancakes, served in a bowl and topped with your favourite toppings. Some people seem to be putting milk on them as if they were actually cereal, but that was a step too far for us! To make them use our standard pancake batter and add in some extra plant milk, then blend until a smooth batter has formed. Transfer the batter into a squeezy bottle, as this helps to control the batter more when pouring into the pan. Squeeze the batter into a hot pan and make a circle slightly bigger than a 50p coin. Leave to cook for a few minutes then flip them and cook for another minute or so. When you've cooked all your pancakes pop them in a bowl and they're almost ready to eat! We topped ours with fresh strawberries, vegan butter and a drizzle golden syrup. They were delicious! Although they do take slightly longer to make than normal-sized pancakes, we thought it was 100% worth it! Below are the ingredients for 2 portions of pancake batter.

 

What you'll need (2 portions):

  • 1 cup of mashed banana

  • 1 cup of almond milk

  • 1 cup of plain flour

  • 1 tsp baking powder

  • 1/2 tsp bicarbonate of soda

 

 

02. CREPES

When I was little, crepes were the go-to pancake in our house, we barely ever had the American-style pancakes, so there's something very nostalgic about these for me. My favourite way to have them is simply with a squeeze of lemon and a sprinkle of sugar. Our vegan banana pancake recipe can be used to make crepes, however, the original recipe is too thick. You just need to thin it out with some extra plant milk and blend it until it's smooth. Then pour the mixture into a hot pan and spread it out, making sure your pancake is nice and thin. You'll know they're ready to flip when the edges start to crisp up. Flip and cook for a few more minutes. Top with your favourite toppings. Below are the ingredients for 2 portions of pancake batter.

 

What you'll need (2 portions):

  • 1 cup of mashed banana

  • 1 + 1/2 cup of almond milk

  • 1 cup of plain flour

  • 1 tsp baking powder

  • 1/2 tsp bicarbonate of soda

 

 

03. BLUEBERRY & CHOCOLATE CHIP AMERICAN PANCAKES

These are the ultimate pancake! They're super decadent which makes them feel like such a treat. The addition of the blueberries and chocolate chips just take them to the next level! They're proper American-style pancakes, and we think they'd be delicious with some crispy vegan bacon on top too. 'This' vegan bacon is our favourite brand. The batter for these remains the same as our basic pancake recipe. The only change is the addition of the blueberries and chocolate chips. They're so easy to make, so there's nothing stopping you! Below are the ingredients for 1 portion of pancake batter.

 

What you'll need (2 portions):

  • 1 cup of mashed banana

  • 1/2 cup of almond milk

  • 1 cup of plain flour

  • 1 tsp baking powder

  • 1/2 tsp bicarbonate of soda

  • 1/2 cup of blueberries

  • 4 heaped tbsp of chocolate chips
